Miso Soup with Tofu

Dashi base with cubed silken tofu, wakame, and a finishing whisk of white miso.

Soak the wakame 5 minutes; squeeze and chop.

Warm the dashi; add tofu and wakame; do not boil.

Off the heat, dissolve the miso through a fine sieve.
